  • 1¾ cups 425 ml unsweetened coconut milk
  • 5 oz. 140 g fresh strawberries, sliced
  • 1 tbsp 1 tbsp lime juice
  • ½ tsp ½ tsp vanilla extract

Making low carb simple

Instructions

  1. Place all ingredients in a blender and blend until smooth. Using canned coconut milk (drain off the liquid) makes a creamier, more satisfying smoothie.

  2. Add more lime juice if you like.

Tip from our Dietitian

If enjoying this smoothie for breakfast we recommend increasing the protein for a more filling and nutritious meal.

If you tolerate dairy, replace the coconut milk with greek yogurt and add 2 tbsp whey protein isolate per serving. Add some water for a runnier consistency if needed.

If you don't eat dairy products, eat a couple of eggs on the side.

    Is there a listing of the micornutrients for these recipes? I'm looking for Total Carb Count, Fiber Count, Protein Count, Fat Count.

    The amount of displayed carbs is net carbs (Total amount of carbs - fiber).

    It's not thick enough and definitely not enough taste to it. It's like drinking pink water.

    If you use yogurt (full fat plain) it will be thicker. If it's still not thick enough add Chia seeds. The carb count will change a bit.

    Heavy cream should be fine... (but it's still liberal low carb, I would be a bit careful with it if your goal is weight-loss.)

    Hi Bianca!

    If you look at the carb content, full fat milk and coconut milk have about the same so from that perspective it should be OK. But this is liberal low carb and look att the serving size, one serving is quite small. So if you are going for weight-loss don't drink to much of it...

    What about full fat milk?

    Usually when it comes to low carb, it's talking about from the can. The one from the carton doesn't really have fat in it.

    Berries are the best fruit option on keto, so raspberries, blackberries or blueberries would work well.

    Regarding the ‘tip’ to add yogurt instead of coconut milk , is that 1 and 1/4 cup for a 1 serve, ? That means it would be way more than 10g of carbs. The strawberries (125g) alone are 10grams?

    Yes, that's correct. The nutrition information is for the recipe as written with the coconut milk.

    I'm a confused by coconut milk in grams and fruit in ml
    Shouldn't it be liquid in mls and fruit in grams.

    We have not tested the recipe with adding protein powder. If you are using a protein powder, make sure and avoid any kind of artificial sweeteners.

    Yes, almond milk will work well also. It may not be as thick as the coconut cream.
