4 Ingredient No-Bake Baileys Cheesecake Balls

Desserts don't get any simpler than these cheesecake balls. They're completely no-bake, so there's no need to switch the oven on! Plus, you only need 4 ingredients to make them:

  • White chocolate Tim Tams(see substitution options below)
  • cream cheese
  • Baileys Irish cream
  • Chocolate, for dipping

Tim Tams are an iconic Australian cookie made by Arnott's. If you are unable to buy them, you can substitute them with any other white chocolate coated cookie.
For something a little different, you could use Oreos in place of the Tim Tams (this will give you a beautifully dense chocolatey flavour).

How To Make Cheesecake Balls

It couldn't be easier to make our Baileys Tim Tam Cheesecake Balls....

  • Crush white chocolate Tim Tams until they resemble fine crumbs.

  • Mix Tim Tam crumbs with the cream cheese and Baileys Irish Cream liqueur.Place into the freezer to harden.

Can I use any type of cream cheese?

Absolutely! I generally use Philadelphia (Philly) full fat cream cheese but you can use any brand you like.

I can't buy Tim Tams where I live! What can I substitute them for?

You can substitute them with any other white chocolate coated cookie. Or for a rich chocolate flavour,you could use chocolateOreos.

Do I need to chill the mixture first?

Yes, once you've prepared the mixture, chill it in the freezer (or fridge) for 30 minutes. This will allow it to harden enough to roll into balls. The heat from your hands will make the balls sticky when you roll them, so it's important to place the rolled balls back into the freezer (or fridge) for a further 30 minutes before dipping them in the melted chocolate.

Can I leave the Baileys out or substitute it?

Yes! You can omit it entirely or you can substitute it for a different liqueur (such as Kahlua).

How long will Baileys Tim Tam Cheesecake Balls last?

The balls can be stored in an airtight container in the fridge for up to 5 days (although they'll never last that long!).

Can I use sweetened condensed milk instead of cream cheese?

You can make Tim Tam balls with sweetened condensed milk, but the ingredients and quantities are slightly different. Check out this recipe if you want to use sweetened condensed milk.

Ingredients

  • 380 g white chocolate Tim Tam biscuits see notes
  • 225 g cream cheese softened
  • 60 ml Baileys Irish Cream liqueur
  • 300 g white chocolate for dipping
  • 50 g melted milk chocolate for drizzling, optional

Instructions

Conventional Method

  • Crush white chocolate Tim Tams until they resemble fine crumbs.

  • Mix Tim Tam crumbs with the cream cheese and shot of Baileys Irish Cream liqueur. Place into the freezer (or fridge) for 30 minutes or until hardened.

  • Roll the mixture into 1 inch sized balls and place on a tray lined with baking paper back into the freezer (or fridge) for a further 30 minutes.

  • Place white chocolate in microwaveable bowl and microwave on 50% power for 2-3 minutes, stirring every 30 seconds, until chocolate is completely melted.

  • Place the balls into the bowl of melted chocolate (in batches) and use two teaspoons to roll the balls around until they are completely coated. Remove balls with the teaspoons and allow any excess chocolate to drip off.

  • Place back onto the baking paper lined tray. Place into the fridge to set for 1 hour.

  • Drizzle with melted milk chocolate if desired.

Thermomix Method

  • Place white chocolate Tim Tams into the TM bowl and crush on Turbo until they resemble fine crumbs.

  • Add the cream cheese and Baileys Irish Cream liqueur and mix on Reverse Speed 2 until well combined (scraping down the sides of the bowl occasionally). Place into the freezer for 30 minutes or until the mixture has hardened.

  • Roll the mixture into 1 inch sized balls and place on a tray lined with baking paper and place back into the freezer for a further 30 minutes.

  • Place white chocolate into a clean TM bowl and melt on 50 degrees, Speed 3, 2-3 minutes, scraping the sides occasionally. Pour the melted chocolate into a small bowl.

  • Place the balls into the bowl of melted chocolate (in batches) and use two teaspoons to roll the balls around until they are completely coated. Remove balls and allow any excess chocolate to drip off.

  • Place back onto the baking paper lined tray and into the fridge for 1 hour.

  • Drizzle with extra melted milk chocolate if desired.

Cream cheese -I recommend using full fat cream cheese for this recipe. I generally use Philly (Philadelphia brand) but you can use any brand you like.
